Does anyone know of any good condiments to use with carrots. I dont like them plain that much. I also dont care for ranch dressing as a general rule.

I actually like my carrots with vinaigrette... especially anything like raspberry-walnut vinaigrette. Especially if you throw in some spinach and pomegranate seeds to make it a salad.

Raspberry (Walnut) Vinagrette,
or an Asian-Ginger dressing.

They are pretty good when cooked with just a tiny bit of melted butter. Remember that your body needs some fat, just not very much, and if you are going to eat solid fats, natural is better than artificial, ie butter is better than margarine.

cooking tends to take some of the vitamins and the like out of vegies, but the real concern is I am using baby carrots as snack food as suggested by some. They are very filling actually, but a bit to bland.

Garlic salt or onion salt. You might try pickling them. It takes a little time, but it sounds really interesting.

Peanut butter is one of the better ones, but if you can find the right carrots (namely the ones that aren't dry and powdery looking) it shouldn't be necessary.
